The Intercostal or Rib Fingers are found between the bones that run from the rib eye rack to the short ribs. This cut is a reservoir of flavour and juiciness and is the same meat that you enjoy when gnawing on the Pork equivalent referred to as   Spare Ribs   or   St Louis Ribs .
