The Intercostal or Rib Fingers are found between the bones that run from the rib eye rack to the short ribs. This cut is a reservoir of flavour and juiciness and is the same meat that you enjoy when gnawing on the Pork equivalent referred to as Spare Ribs or St Louis Ribs .
Also available pre-marinated in a soy, garlic and sesame oil sauce for easy, delicious cooking.
